We also made this Wedding soup from the same Thug Kitchen cookbook (it's awesome).

The white bean balls were so tasty, I was sneaking a few to eat on their own. We served this for Sunday dinner with our parents who are a little more seasoning/spice averse and even though there was a lot in it, they had no complaints at all. Leftovers of this worked for lunches this week as well.

 
i wouldnt be surprised if the % of meat-eaters and vegetarians flip-flopped in the next generation, and am pretty sure if i was young i'd be veganish, but i have never understood pretend meat. veggie dogs, beanburgers, saitan pastrami & such. weird -


I think the sagacious wikkid might be right about this. I think younger folks are moving this direction faster than any other generation prior.
 
Preheat oven to 400

Slice an eggplant into “fries”. I leave the skin on

Dip in seasoned eggs then seasoned bread crumbs

Spread on sprayed baking sheet drizzle with olive oil then bake for 15 mins, bottom should be lightly browned. Turn fries over and bake for 10 mins

Dip in marinara or ranch

Delicious!
 
Indian foods always take way long to cook (for me at least) and they tend to be not quite as good as just about any Indian restaurant, but I still like to give it a go.

I make my own paneer which I enjoy and have been making a version of this for a bit now. I don't have it down perfect yet, but it is quite good, IMO
