I don't, but one of my favorite vendors at the Beaverton Farmer's Market specializes in roasted pumpkin seeds. The Chili Lime are incredible. I bet you could duplicate something like that. Highly suggest trying these out for those looking for a different healthy snack option (only so many almonds I can eat).

Ooh chili lime. interesting. Also that one above sounds cool. Think I'm going to go with my homemade cajun rub for this first pumpkin, but we have, seriously, 13 pumpkins this year so I will have plenty of chances to try new recipes. Will defintely try the one posted and find some kind of chili lime thing too.

With people coming from all over, having an oppty for a 3 day weekend is pretty important. Flying in from either coast Friday eve and leaving Sun is pretty brutal. I've never had a job where I couldn't request off the Monday after the SB, esp. if requested far in advance.
