We're so spoiled by people like McGahee and Chubb returning to prominence that we forget not everyone makes it back.
Not to totally derail this thread, but Trent Richardson had two knee surgeries in 2012 (before and after his rookie season).
Sometimes these little injuries can sap players of athleticism, and the NFL is not very forgiving once a player loses a step.
Pitts also had a nightmare concussion in college, which always makes me leery after living through Jahvid Best.
Just spitballing here, but this stuff can partially explain the nonexistent separation and the poor contested catch results.

Very strange season for the TE position for sure. Not sure what has caused it.As bad as it’s been with Pitts, it’s not like we’re getting crushed at the position. The position is a wasteland. No one is lighting it up. Who do you want instead? Not saying Pitts is the best by any stretch. But there are guys ahead of him pts wise that got all their pts in one game. Likely. Goedart. Of course I’d trade Pitts for LaPorta etc. But the margin of separation at the position is insignificant.
I think it's due to a shift to defenses selling out to stop the passing game and TE's are not creating mismatches right now. I remember Derrick Mason catching a 4th quarter TD in week 16 nearly 20 years ago to cause me to lose a title by 2.8 points. I won the title the next year and couldn't name a single player or game from that season. It's true. Granted I have a few times where I remember a game-winning decision but the losing ones stick with me more. Bill Simmons once said something to the effect of "losing hurts more than winning feels good" and I think it holds true. I think it's part of the defense mechanism of the mind, remembering negative things. You climb a tree successfully 100 times but you fall down a tree once and you might be afraid of ever climbing a tree again. Same applies in fantasy: you set your lineup optimally and win your matchup and you don't think much of it because that was the intended result, but lose a matchup because of it and you'll second-guess yourself. That's what happened to me last week with benching Kenneth Walker. If I miss the playoffs in my league by one game, that's going to be the move that haunts me. Though on the topic of Pitts, he did win me a matchup recently with a late 4th quarter catch in the Falcons/Eagles game.
