Update: Got to Franklin Barbecue at 11:40 this morning. 10-12 people in line. They were out of sausage (which apparently doesn't happen very often) but everything else was available. I was had the brisket plate plus a third pound of pulled pork in hand by noon.

The pulled pork was good but nothing special. Hopefully next time I'll be able to go with the original plan of sausage instead.

The brisket was amazing. Best I've ever had. The charred black outside part tasted like angels. <_<

Franklin got a mention in the latest issue of Garden & Gun magazine. So, instead of 10-12 people in line at 11:40 on a Sunday, now there might be 14-15.

I'm pretty sure the reason everyone thinks they have some of the best brisket in Texas is because they have some of the best brisket in Texas. I'd be surprised if that many people were wrong. Zero need to try to "convince" me of that.As far as the trailer goes, I think it actually helps them get hype and adds to the experience. Best BBQ in Texas is cool. Best BBQ in Texas and it's served out of a trailer with a gnome? Even cooler. Would you disagree?J

Well, the brisket was still pretty dang good cold a couple days later.Wasn't crazy about the potato salad or coleslaw. Serviceable. Will try the beans next time. But that not why we here.Loved the espresso sauce. In serious moderation though to not cover up the brisket's flavor.In conclusion Franklin BBQ is a huge added incentive for me to visit this girl in Austin again. It's less than three miles from her house. And the vegetarian issue was easily solved by swinging by Chipolte.

Yeah, I figured. I had a business conference in San Antonio earlier that week and met a girl on the Riverwalk that told me Stubbs was better than Saltlick and Iron Works. I just nodded and agreed so I could have teh secks. For some reason stopped in for Lunch when I was in Austin that w/e. Let's just say I was longing for Rudys. Best thing about going to Stubbs during the day is you can sneak back to the stage and take some great pics of a historic venue

My niece is getting married in Paris, Texas in October. I'll be flying into Dallas and driving up to Paris to get there. The only thing I want to accomplish while I'm there (other than attending the ceremony, and I don't even really care much about that) is having the best Texas style BBQ I can manage. I am willing to drive a decent amount out of my way, but don't have time to drive in the opposite direction down towards Austin from where I need to be.

Can anyone recommend a BBQ joint roughly on the way to Paris from Dallas? Special bonus points if there's someplace worth recommending that's actually in Paris.

You know your BBQ for sure. On the other end of the state, but I never miss Harold's in Abilene on way to BBQ mecca central Texas. Best sweet sauce there is. There is also a small dive in Midland called Sams. They make their own sausage and I have to say it's the best I've ever had. Meaty, firm,and spicy.

Unfortunately, they're not even close to being on the way from Dallas to Paris. Unless he has time to turn a quest for bbq into a serious side trip (and it doesn't sound like he does) he's not going to make it to that area. He can still get good Texas style BBQ, just not the best. Nothing wrong with that imo.There is a Rudy's in Frisco that would make for a reasonable route from DFW to Paris.

I don't know any places between Dallas and Paris but I do know of Bartley's in Grapevine, which is about 10 minutes northwest of DFW airport. It is not on the same level as the Central Texas joints, but it is still very solid. The brisket and ribs are very good.

I went to college @ SMU in Dallas. We'd go to Peggy Sue quite often. It's nothing compared to Hill Country but definitely good BBQ IIRC. Their pulled pork sandwich is outstanding.

Sonny Bryan's is a pretty good place to hit up in Dallas. The original location on Inwood in Dallas has some character.

Rudy's or Spring Creek are decent chains in the area.

No one needs to. If they were that good people would know about them and stand in line for an hour to eat at them. It just doesn't happen in Dallas. I've lived in DFW and now live down the street from a BBQ Mecca. It's just different.
