I make 16 scrambled eggs once a week on Sunday mornings, eat about two that morning, then save the rest in the fridge for the remainder of the week, heating some up each morning to save me some time. Is this gross?

I make a frittata and do the same thing quite often. I throw everything that isnt nailed down in that bad boy though. 

 
I'm from NJ and that was always the case. Last few years, every time I order over easy, the white isn't entirely cooked, maybe 80 percent cooked. Still some watery white on it, which I find gross. It's as if they flip it for 5 or 10 seconds. Over medium comes out how over easy used to be. 
The most stressful part of going out to breakfast. Waiting for the eggs to see how they ####ed them up. Runny whites gross me out too, but I'm getting over it. I realized one day that I love cocktails that uses egg whites. Gin fizz, Pisco Sour... So why let them bother me so much on a plate? I mean, they still do, but now I'll deal with that better than when the yolks come out with any firmness whatsoever. That's the worst. 

A couple years ago I was at a fancy place and the dish on the menu called for the egg to be sunnyside up. I decided to go for it. It was awesome. I've learned they use the cover the egg trick to steam the top of the whites just cooked like someone mentioned upthread.  The bad part here though is that I've since tried ordering sunyside up multiple times and they are always terrible. Twice I got completely burnt on the button and runny whites on top. I've never been so pissed at a restaurant before. Especially because it took them 20mins to check on me after serving and my gf was already done eating. I told the waitress I was more impressed than mad. Do you know how hard it is to burn half an egg while leaving the other half raw? 

I still suck at cracking eggs without breaking the yolk at home. 

I'm curious about this soft boiled stuff. 

Also surprised over easy is running away with this and it so commonly gets ####ed up at restaurants. 

 
89% of the time sunny side up

:yes:  almost exactly.  When I make them for the family we do scrambled.  Usually add cheese.  Just me, it's sunny side up in butter, sometimes add salsa on top. 

 
I always called them Eggs F##khead.  Only because whenever I was eating them, my mom would always say : "You want some more eggs, F##khead?!"  Imagine my chagrin the first time I ordered them at IHOP.

 
I tried that perfect poached eggs in 60sec microwave trick. Ymmv with the exact amount of seconds... 60 wasn't enough, 75 was too much. I'm obviously out of options now.

 
Love Chef John - after a while his inflections  - and short sentence cadence  - wear on me just a little bit - but he's got a ton of great dessert recipes.
There is something about his recipes that keep me coming back and I think it is the consistency of his directions.  If you follow his directions, it looks exactly like his vids every step of the way.  I don't find that consistency in many that I watch.

Serious answer is that I probably eat about 50 eggs a month.   

Scrambled, with melted Colby Jack and either Chili Pepper paste from my garden, or in lieu of that some really hot sauce.  

 
A runny egg yolk is one of the greatest things ever. Breakfast, on burgers, so many different things and over easy is my go-to.

That said, I discovered this a few months ago and it's a game changer. 

The greatest scrambled eggs ever.

I've never been a scrambled egg person. And the end of that may look too runny. Trust me that it is exquisite and that the wife and kids ask for this all the time now. I substitute sour cream for the creme fraiche and green onions for the chives since I always have those on hand. The key is not overcooking it, constantly stirring, and serving on hard bread. 

Try it and you will thank me later.

I agree for the most part. But what I don't get is a runny yolk over beef tartare. Raw beef doesn't need more slimy texture over it, IMO.

 
I've just recently become a convert to poached. Scrambled is still easiest but poached is so much better than over easy or sunny side up.

I either like them hard boiled (but when they are warm), scrambled but not too done or underdone, or over medium.  An egg that is too done scrambled or an omelette smells like a wet dog to me.

 
Over easy. 

One of my favorite easy meals is two over easy eggs in white rice with some soy sauce and sriracha.

Also like soft scrambled with a little heavy whipping cream and a dash of garlic powder

 
I have a particular hate for scrambled eggs, for some reason. Which is odd, working in a breakfast restaurant. I think it stems back to childhood. Living in a family of five, scrambled eggs were simpler. And of course, whoever was cooking them would make a bunch at once, and if they aren't eaten immediately (for me, they rarely were) they are just disgusting. Dried out and overcooked. And if my sister made them, they had gobs of cheese. The only thing I hate more than scrambled eggs is scrambled eggs with cheese.

 I had never even heard of a fried egg until college (and I was introduced to them on a drunken night in the frat house kitchen where they were cooked in all bacon grease, needless to say, I was hooked). 

Scrambled eggs and omelettes that are overcooked in the slightest smell like a wet dog to me. They are very easy to overcook. If they aren't overcooked on the grill, there's a good chance they'll be overcooked by the time you eat them. I can eat an omelette, but only one that most people would consider way undercooked.

I spend a lot of my time making eggs scrambled hard with cheese, which feels like a particular kind of punishment to me. Ugh, and a well done omelette is even worse (that's where the wet dog smell is really prevalent). I'm happy to take anybody's money, so I'll ruin whatever you like, but I don't have to feel good about it.

My hatred of scrambled eggs and omelettes led to our Papas Huevos line. They are all basically hashbrowns with cheese and your typical omelette fillings on top, and then over easy eggs on top of all of that. The yolk mixed in with all the other crap is just delightful. It's an omelette type of experience for omelette haters.

We eat a lot of beans and rice at home,and I love to throw a couple of over easy eggs on top.
